Marbling is the tiny flecks of fat visible in a cut of beef that have a direct relationship to the flavor, juiciness, and savory eating experience which will delight the pallet of your patrons.
The BMS* scale is the part of the Japanese Beef Grading system which ranks beef according to the amount of marbling visible in the meat. In other words, the more marbling, the higher the quality is considered to be.
Based on the BMS system, Imperial Wagyu Beef sorts carcasses into four distinct catigories: 4-5, 6-7, 8-9, 10 and up. These four distinct marbling sorts assure you a highly consistent quality you can depend on. The difference is visible in the marbling diagram on this page.
